The kids are back at school and now is the time to stock up on lots of allergy free foods and snacks. Here at Mountain Health we have a great selection of allergy free foods and snacks to choose from. A great product I’ve had a lot of good feedback from customers and clients, is Fusion Allergy. It has a natural antihistamine action and can be used for digestive allergies as well as hay fever, eczema and hives and is safe for children 2 years onwards.

Lunch box Nori Rolls

Try these deliciously healthy, allergy friendly, lunch box nori rolls.

Ingredients:
  • 1 cup quinoa
  • 1 tbsp. apple cider vinegar
  • 1 Lebanese cucumber
  • 1 small red capsicum
  • 1 avocado
  • 1 carrot
  • 3 tbsp. tahini
  • 4 nori sheets
Instructions:
  • Place 1 cup of quinoa with 2 cups of cold water into a saucepan.
  • Bring to the boil, then reduce to a simmer, cover and cook for a further 12-15 minutes.
  • Turn heat off and let sit with lid on for further 5 minutes.
  • Cool quinoa and stir in apple cider vinegar. 

  • Meanwhile cut vegetables into long thin slices. 

  • On a sushi mat layout your nori roll and spread a thin layer of tahini at one end.
  • Spread a 1cm layer of quinoa over the whole sheet (not covering the tahini) keeping about 2cm at the far end of the sheet free from rice.
  • 
Place the vegetable fillings on top of the quinoa
Lift the front of the sheet closest to you and begin to roll the sheet tightly.
  • Just before reaching the end of the sheet wet the exposed edge with a little water.
  • Apply gentle pressure to join the edges of the nori.
  • 
Rolls can be eaten whole or sliced with a wet, sharp knife. 
Other veggies you could try include spinach, asparagus, beansprouts, or anything you like!

Herbal Iced Tea

When the weathers warmer, it’s a perfect time to enjoy your herbal tea chilled!
How to make herbal iced tea:
  • Make a strong tea by using more herbs than you normally would for brewing a cup—about 1 tablespoon per cup of water—since you’ll later be diluting the brewed tea with ice.
  • Steep a little longer than you normally would for a cup or pot of hot tea, about 15 to 20 minutes.
  • Pour the strong brew over a lot of ice and serve. Or combine it with an equal amount of cold, filtered water and refrigerate until chilled.

Back to School Food Allergy Concerns

Avoiding food allergens can mean steering clear of a life-threatening emergency for some kids. While peanut and tree nut allergies cause some of the greatest concern, food that comes into the classroom can also affect children who suffer from conditions like celiac disease or a dairy allergy. So whether your child suffers from an allergy — or the child that sits next to your child suffers — it’s important to be aware.

Do you struggle with what to pack for snacks and lunches in a nut-free school zone? Here are some practical tips to help make it easier.

  • Read labels. Improved allergy info is now available on most packaged foods. Check ingredient lists for things like peanuts and tree nuts (such as walnuts, almonds, cashews and pistachios), and look for disclaimers that read that the food contains a specific allergen or if it was “processed in a facility that also processes” things like nuts, milk, eggs, soy and wheat.
  • Opt for alternatives.  Experiment with allergen-friendly options like sunflower seed butter and certified allergen-free snack foods. Many kids can’t even tell the difference.
  • Go fresh. When packing a nut-free snack for your little one, start with fruits or veggies such as raisins, apples, carrot sticks or a banana. Then add another component to keep things interesting such as fava beans or organic popcorn.  Make the snack energizing and satisfying with a balance of healthy carbs and protein

 Healthy Chocolate Crackles

This popular recipe is perfect for school lunches, gluten, dairy, sugar & nut free!

Ingredients


100ml  of extra virgin coconut oil, melted

1/4 cup of desiccated coconut (optional)

2-3 tablespoons of cacao powder (more cacao will make it more chocolately)

2 cups of puffed grain, puffed brown rice is good but it would work with millet, quinoa or activated buckwheat (or a mix).

1/2 cup of dried blueberries or goji berries (optional)

** up to 3 tablespoons of rice malt syrup can be added if you like them sweeter

Method

Place all ingredients in a bowl and mix thoroughly.

Put in freezer to harden for five minutes.

Remove from freezer and stir again.

Spoon into cupcake cases and place in fridge for 30 minutes.

Take them out of the fridge and serve immediately. If the crackles are left out too long the coconut oil will melt. Store in the fridge/freezer.
