You can have a natural tan

Summer is here and the time when you wish we were looking a little browner. Many fake tans use a man made synthetic DHA, its quite toxic & should be avoided. DHA is the main ingredient responsible for the tan effect.

Thankfully there are natural fake tans available. These use DHA derived from natural ingredients, such as sugar beets. The main difference is that the natural versions are made to react to the amino acids only in the top layers of the skin. While chemical based tanning products, chemicals can be added to weaken the skin’s surface that will result in the product being absorbed into the blood stream, the tan develops faster and the nasties penetrate deeper. Quinoa, Black Bean and Avocado Salad

The festive season brings along with it an abundance of food & drink and plenty of opportunities to over indulge. Try this delicious salad in between events to stay on track for a healthier you. This cleansing salad has a great balance of essential fats, antioxidants & blood sugar balancing from apple cider vinegar. The quinoa & black beans are a perfect mix of protein and fiber.

Ingredients:

1 cup of uncooked quinoa

1 can of black beans

1/2 cup of fresh corn kernels

1 punnet of grape tomatoes, halved

1 avocado chopped

½ red onion cut finely.

1 cup of finely chopped coriander

Dressing:

1 tbsp organic olive oil

1 tbsp organic flaxseed oil

4 tbps of organic apple cider vinegar

1 clove garlic minced

2 tspns cumin

2 tbspns lime juice

1 tspn turmeric

¼ tsp Himalayan salt

 

Rinse and drain quinoa. Add to pot with 2 cups of water (or vegie stock) and bring to the boil. Cover reduce heat to low & simmer for 20 minutes or until water has absorbed & quinoa is tender. Leave to cool.

Combine all salad ingredients with the black beans & cooled quinoa.

Combine all dressing ingredients in a jar & shake until mixed.

Pour dressing on top of salad & toss to combine.

Serve straight away or chill for later

Try these delicious magnesium rich muffins to boost up your dietary intake of magnesium. They are also gluten free, dairy free, full of fibre & healthy fats!

Cacao and Avocado Muffins

Ingredients:

1 ripe, mashed avocado

1/2 cup coconut sugar

1 1/4 cup organic rice milk

2-3 TBSP raw honey

6 TBSP coconut oil

1/2 cup brown rice flour

3/4 cup almond meal

3/4 cup buckwheat flour

3-4 TBSP raw cacao powder

1 TSP cinnamon

3 TSP baking powder

Method:

Preheat oven to 180 c

In the bowl of an electric mixer combine the rice milk, coconut sugar, mashed avocado, honey & coconut oil until smooth.

In another bowl mix all the dry ingredients.

Add 1/2 dry ingredients to wet ingredients and mix, add the rest of the dry mix in and blend until combined.

Scoop 2-3 TBSP of the mix into cupcake liners.

Bake for 25 mins or until firm.

Fruity Chia Porridge

In a microwave safe bowl, combine 3/4 cup of milk (any milk will suit), 2 tablespoons of chia seeds, and 1 teaspoon of chopped raisins. Set aside in fridge overnight.

Next morning stir in 1/4 mashed banana. Microwave on high for 30 seconds. Serve warm or cold topped with chopped almonds & berries.chia porridge

Cacao Super Crackles

Try this delicious and nutritious, chocolatey crackle treat.
Filled with fibre, essential fats, magnesium, iron, b vitamins & antioxidants.
Kids wont even know they are healthy!

Ingredients
• 2 cups brown rice puffs
• 1/2 cup shredded coconut
• 1 TBS chia seeds
• ¾ cup coconut oil
• 1 TBS almond butter
• 3 TBS cacao powder
• ½ cup of dried blueberries

Method
• Line a 12 cup muffin pan with paper cup liners.
• Mix together rice puffs, shredded coconut & chia seeds in a bowl
• Melt coconut oil in a saucepan on stove top, then stir in almond butter & cacao.
• Stir the coconut oil mix through the rice puff mix until combined.
• Spoon mixture into liners.
Place in the freezer for about 20 minutes to set.

Low FODMAP Humus

For people on a low FODMAPs diet, things as simple as eating dips is a nightmare because the nearly all contain onions. The ever popular Hummus cannot be eaten because of the chickpeas! This “hummus” recipe is Low FODMAPs, gluten free & vegan, serve it with celery sticks or spoon it onto a salad.

Ingredients:
2 x organic zucchinis, chopped
¾ cup x raw tahini
2 tablespoons of nutritional yeast
½ cup x fresh lemon juice
½ TBSP ground cumin
High-quality sea salt, to taste

Put all the ingredients in a blender & blitz until smooth.

Ground Almond Fruitcake

Delicious & healthy Christmas cake. Make as gifts or enjoy for yourself!

• 250g seedless dates
100g mixed peel
• 50g glacé apricots, cut into pieces
90g red glacé cherries
• 90g green glacé cherries
80g raisins
• 250g brazil nuts
185g walnuts
• 100g ground almonds
½ teaspoon baking powder
• 3 large (59g) eggs
2 tablespoons (40ml) honey
• 1 teaspoon homemade vanilla extract
2 tablespoons rum
1. Put the dates in a large mixing bowl, checking carefully for pips as you go
2. Add all the remaining fruits, brazil nuts and walnuts and stir well. Add the ground almonds and baking powder and stir to combine.
3. In a small bowl, beat the eggs until thick and creamy, then beat in the honey and vanilla extract. Pour the eggs into the fruit mix and stir well to combine. Make sure that every piece of fruit and nut is well coated with the batter.
4. Preheat the oven to 150C with fan. Line two bar pans (8cm x 26cm) or five small loaf pans (8cm x 15cm) with parchment paper. Divide the mixture evenly between the pans, making sure to work it well into the corners.
5. Bake for about an hour (start checking after 50 minutes), or until the cakes are firm and dark brown. Brush the rum over the hot cakes, then wrap tightly in foil and allow them to cool in their pans overnight.
When completely cool, wrap the cakes tightly in foil and store in the fridge.
